Salmon and Couscous for Dinner

I made Ellie Kreiger's Roasted Salmon with Shallot Grapefruit Sauce last night and a side of couscous with spinach to go along with.  It was very refreshing and light.  The grapefruit and fresh basil paired nicely with the salmon.  I adjusted the temperature and time for roasting the salmon because we like our salmon slightly undercooked. 

Recipe for Perfectly Undercooked Salmon:

Preheat oven at 425 degrees
Add salt, pepper, and olive oil to salmon fillets (I eyeball the olive oil and sprinkle the salt & pepper to taste)
Roast salmon on a baking sheet laid out with parchment paper for 7 to 8 mins
*The timing and temperature is really crucial.  I have a manual oven thermometer in addition to the electronic thermometer in the oven and swear by it.  The electronic thermometer is always about 25 degrees hotter than what it reads.

Yum!  All gone!!
