Oven Fried Chicken Night

I LOVE fried chicken but rarely eat it because of the grease and salt so I made this healthier version with Ellie Krieger's oven fried chicken recipe and it came out fabulous!  I used multi-grain cereal flakes and multi grain crackers as coating for the chicken and I used chicken bone in thigh meat instead of a mixture of breast and thigh meat like the recipe suggested because that is what we had in the fridge.


You can see I pulled off all the chicken skin but left a little of the fat on the chicken for flavor.

And I decided to make some coleslaw to go along with the oven fried chicken with another one of Ellie's recipes.  I omitted the caraway seeds from the recipe because we didn't have them in the pantry and the coleslaw tasted fine.  =)


The chicken is out of the oven and this is when I'm calling Mat to come downstairs for dinner.


Dinner time!  The chicken was super moist and delicious inside.  It wasn't the same as fried chicken but the flavor was all there.  The cayenne pepper gave the chicken a nice kick and we didn't need to add any hot sauce to the dish.  We're definitely doing this recipe again!
