Did you know you can keep homemade vanilla extract for 25 years or longer? I had no idea. This is so easy and simple I don't know why I haven't seen this done more often or I'm catching on to the bandwagon late....that is probably it. I've read different recipes for this and you can either split or halve the vanilla bean pods to infuse the extract with seeds but I just left them as is. I plan on opening the vanilla bean pods later when I need the seeds for a special recipe like vanilla bean ice cream or vanilla bean panna cotta.
Recipe
Ingredients
2 whole vanilla bean pods
About 3/4 c vodka or enough to cover
Directions
Place the vanilla bean pods in a container. I used a jelly jar. Cover the vanilla bean pods with vodka. Let the jar sit in a cool dark place for at least 2 months. It is best after 6 months. Replenish the vanilla bean pods and add more vodka as needed.
